Chef Laudico Bistro Filipino

For some reason, every time we tour around friends from other countries in Manila, we always end up at Intramuros.  After a long and hot afternoon with Ton from Marlon's office, we decided to have dinner at Bistro Filipino so he can also experience the laid back atmosphere of Bonifacio Global City. I chose to have dinner here because I missed that Cheesy Salmon Escabeche during my Tita's birthday.
Sadly they  did not have that dish on the menu. Either it was phased out or only served during special functions.
They served us a basket of warm and soft pan de sal along with some butter. I liked how light the bread felt on each bite.

We started with the Pica Pica Platter (PHP 328). I loved everything I ate and the innovative way of serving these traditional Filipino dishes like palabok in a spoon, sisig on different crisp baskets, lumpia in a cone and more. I wish there are about 2 servings of each though so I can try more.
Ton ordered the Tiger Prawns (PHP 688). I was surprised they did not scrimp on the prawns. It was a lot of prawns stacked together and served with different sauces on the side. Ton opted for mashed sweet potatoes on the side instead of rice. He liked this dish very much.
Marlon had the Squid Relleno (PHP 328). The meat stuffing was very tasty and the squid remained soft. This was the one I liked best as well. They used small squid which must be why it remained soft. Of course cooking it right was the secret to this. This was served with a bowl of rice on the side.

I decided to try the Salt Crusted Bangus (PHP 348). Salt was used to coat the bangus then baked in the oven. The salt locks in the moisture trapping all the juices in the fish. It was tender and juicy indeed. What I didn't like though is that some of the salt can get lost within the fish in clumps you cannot see thus a salty surprise once eaten. This was also served with rice.

They served us three sauces on the side--pinakurat, liver sauce and honey mustard using mayonnaise made from scratch. I liked the pinakurat best on my fish.
The service was superb as well. The staff knows what to recommend and was very courteous and efficient the entire time.
This is a good place to promote Filipino cuisine to our tourists and give them a different idea about the potential of our food as long as we do it right. It takes time to cook delicious Filipino food. The more time, the better results.
